VEGAN BANANA BREAD

I've tried SO MANY banana bread recipes and this is the best one so far. A dessert that is healthy & SO SIMPLE to make. These ingredients are pretty much kitchen staples so no need to run out to the shops to get anything (perfect for cold winter evenings)
 

 
Ingredients:
225g spelt flour, 3 teaspoons baking powder, 100g coconut sugar, 3 teaspoons cinnamon, 3 large ripe bananas, 75g oil (I recommend olive or coconut)


Method:
Preheat oven to 200 degrees C
Mash the peeled bananas with a fork. Mix well with oil and sugar
Add in the flour, baking powder and cinnamon, and combine well
Bake the mixture in a lined loaf tin for 20 minutes*. I lined my tin with greaseproof paper but you can also line it with coconut oil
Check the bread with a knife; poke it through to the bottom, if it is gooey, put it back in the oven for 40 minutes (approximately). Cover the loaf cake with foil if it is getting a bit burnt
Allow to cool a little before slicing. It's great freshly baked but even greater the the next day!

*NOTE: the timing will vary if you are using a fan oven (things bake quicker with a fan oven)
