When you hear the word "SALAD", a general feeling of melancholy tends to take over the body. But alas, greens are filled with antioxidants, micronutrients, vitamins and a whole heap of other stuff that is NEEDED for good health. So we have to eat them. Luckily, there are many ways to make them taste NOT BLAND. And here is one of them.

Cashew and garlic dressing. Tasty, healthy, easy to make. Whether you are plant based or not, you probably have all of these ingredients in your kitchen already. 

- 1 garlic clove
- Fresh lime juice
- 1 cup SOAKED cashews (minimum 30 mins)
- 1/3 cup of water (add more if needed)
- Pink salt
- Oregano

Drain the cashews and put all the ingredients into a blender. Whizz it all up until SMOOTH.
If 1/3 cup of water is not enough, add more. You want a thick but lump-free texture

Perfect to add on to your salads (which, ideally, you should be having 1 of every day).
Also great as a nacho topping/dip (as seen in the video below)
