Simple avocado pasta sauce (for those days you don't feel like red pasta).
2 cloves of garlic, 1 ripe avocado, olive oil, coriander, fresh lime
Boil your pasta of choice (I usually use quinoa spaghetti or spelt fusilli)
As that boils, make your sauce; peel the garlic cloves and blitz in a blender. Add the avocado, chopped coriander, 1 tbsp of olive oil and freshly squeezed lime and whizz it up again
If it is lumpy/thick, add some more olive oil until it is smooth
Add salt and pepper to taste
SIMPLE. Healthy & cute change from the standard tomato pasta sauce.
