RECIPE: Vegan brownies

Chocolate is my weakness and, to be honest, if chocolate isn't your weakness I don't know how much I can trust you.These brownies are fudgy, gooey, chocolate, vegan and HEALTHY!!!! Using ingredients like spelt flour and coconut palm sugar reduces bloating of the stomach (unless, like me, you in 10 in one go ... no regrets). These ingredients also reduce inflammation in the digestive tract and around the rest of the body. Winning all around!



Below is a step-by-step video for the recipe and right at the bottom of the page is the written version





- 2 cups spelt flour
- 2 cups coconut palm sugar
- 1 cup water (not tap water)

- 1 teaspoon salt
- 3/4 cup cacao powder
- 1/2 cup coconut oil
- 1/2 teaspoon baking powder




- Cook the cup of water with 1/2 a cup of spelt flour over a LOW heat, stirring constantly, until it turns into a gluey paste (yum)

- Remove from heat, set aside and let it cool COMPLETELY

- In a bowl, mix the coconut sugar, salt, cacao powder and coconut oil
- Once these ingredients are combined, gradually add the flour & water mixture and mix well
- Add the remaining 1 1/2 cups of spelt flour and the baking powder. Mix again
- Spread the mixture into a greased tin (use coconut oil or greaseproof paper) or a silicon tray (as used in video above)
- Bake at 180 degrees C for 25 minutes
