RECIPE: Vegan brownies
Fudegy vegan brownies. A relatively healthy alternative to regular brownies; no refined sugars and no processed flour.

INGREDIENTS:
- 2 cups spelt flour
- 2 cups coconut sugar
- 1 cup water
- 1 teaspoon salt - 3/4 cup cacao powder - 1/2 cup coconut oil - 1/2 teaspoon baking powder
METHOD:
- Cook the cup of water with 1/2 a cup of spelt flour over a LOW heat, stirring constantly, until it turns into a gluey paste (yum)
- Remove from heat, set aside and let it cool COMPLETELY
- In a bowl, mix the coconut sugar, salt, cacao powder and coconut oil
- Once these ingredients are combined, gradually add the flour & water mixture and mix well
- Add the remaining 1 1/2 cups of spelt flour and the baking powder. Mix again
- Spread the mixture into a greased tin (use coconut oil or greaseproof paper) or a silicon tray (as used in video above)
- Bake at 180 degrees C for 25 minutes (be sure not to overcook the brownies. Test they are still a bit "gooey" but not raw by sticking a knife into them to check the consistency).
