RECIPE: avocado 2 ways

September 8, 2016

Avocado; one of the BEST fruits and definitely a kitchen staple for me. It is such a diverse ingredient in both savoury and sweet dishes and in today’s video I’m going to show you how to both.

Also apologies in advance for the low resolution of this video in the start and end; I had to use my phone instead of my camera this week!

The first avocado recipe is guacamole! I could eat this by the tonne and never get bored. Here is my fail safe, simple recipe:

  • 1 avocado

  • 1 onion

  • 1 tomato

  • Lemon or lime

  • Salt and pepper (to taste)

  • Dice the tomatoes and onion

  • Slice the avocado and half and remove the pit

  • Dice both halves and add ONLY ONE half to a bowl

  • Using a fork, mash it up

  • Add the diced tomatoes and mix together

  • Add the diced onions and mix together

  • Add the juice of a lemon/lime wedge and mix together (again)

  • Add salt and pepper to taste (and mix agaaaaain)

  • Lastly add the other diced half of the avocado (this gives a varied texture)

This second recipe is for a sweet, healthy dessert dish; creamy chocolate mousse:

- 1 avocado

- 1 ripe banana

- Cacao powder (about ½ a cup)

- Coconut sugar (about ½ a cup)

- Nut milk or water (about ¼ cup)

- Nuts, raisins, cacao nibs for topping (use anything you want here, GET CREATIVE WITH IT!)

In a blender, add all the ingredients (apart from the toppings)

Pulse/blend until smooth
Taste the mixture, add more cacao/coconut sugar/liquid if needed

Place the mixture into some bowls

Add the toppings of your choice; nuts, seeds, butters etc.
